Bruschetta With Sauteed Mushroom, Red Bell Peppers & Cheese


I create this after i read my italian food recipe book. Suddenly i feel hungry and then i try to create a quick, easy & delicious pan-broiled bread (which i decide to call it bruschetta to make it simple).

I hope i write it correctly, this is my first written recipe creation i ever made. Usually i just remembered it, i never wrote it down. I found it pretty difficult to write a recipe....usually when it comes to measure the exact amount of ingredients :P Cheers!


Bruschetta With Sauteed Mushroom, Red Bell Peppers & Cheese

--Ingredients:-----------------------------------------------------
3 1/2 tablespoons extra virgin olive oil
2 cloves garlic, crushed
3 fresh button mushrooms, sliced (it taste better than the canned ones)
1/4 red bell peppers, finely chopped (paprika)
2 tablespoon grated cheddar/mozarella cheese**
Sprinkle of dried oregano & thyme*
salt & sugar*
2 slice whole wheat bread


--Preparation:-----------------------------------------------------
Heat 2 tablespoons of oil in a saucepan over medium-high heat and cook the garlic for 1-2 minutes, or until fragrant and golden. Add mushrooms and red bell pepper. Cook over high heat, stirring for about 3 minutes. Add oregano, thyme, salt & sugar. Continue to cook, stirring once or twice, for about 8-9 minutes.

Meanwhile, spread 1/2 tablespoon oil on top of each bread. After the mushrooms cooked, spoon and spread over the bread and then covered with cheese. Repeat with the remaining mushrooms & cheese for the other bread.

Add 1/2 tablespoon of oil in the saucepan, spread and then pan-broiled over low heat for about 15-20 minutes or until crisp & golden. Serve immidiately and enjoy :)

* I don't know the exact amount of the dried oregano & thyme, coz i just sprinkled a small amount of dried oregano and a bit of dried thyme. Same case happened for the salt & sugar :p

** If you're on a diet, reduce the cheese or try to replace it with ricotta or parmesan cheese. The other ingredients is ok because i use whole wheat bread, olive oil (unsaturated fats) & red bell peppers. Posted by Hello
